Z-Man's Short Ribs
You'll want to fire up the smoker for this one! This delicious recipe was sent in by one of our top customers. It is the perfect meal for a Sunday afternoon dinner with friends and family. We recommend serving it with Purple Potatoes to really wow your guests!

Ingredients

  • (4 lbs) Beef Short Rib
  • (2 Tablespoons) Olive Oil
  • (To taste) Rib/Beef Rub

Directions

Prep - 

  1. Remove the thin membrane on the inside of the ribs.
  2. If desired, cut ribs into smaller pieces by cutting between the bones. (This will cut down on cooking time + enhance flavor)
  3. Rub olive oil onto ribs as a binder for your spices to adhere better/
  4. Rub your favorite rib or beef rub onto all sides. This may be done up to 24 hrs. beforehand to allow spices to marinate in the meat. (I like to use Twist'D Q Sweet Heat Rib Rub, something with brown sugar and other spices for a little extra kick!)

Smoking -

  1. Set your smoker to 225 degrees Fahrenheit. I like to use hickory chips or pellets for beef, but most woods would work well. 
  2. This will always be a long smoke, so use a water pan in the smoke chamber.
  3. Place the ribs on the racks and insert a meat thermometer into one of the largest pieces. Smoke until they reach an internal temperature of 200 degrees Fahrenheit. With a thick rib, this may take up to 5 hours.
  4. Let rest for 5-10 minutes and enjoy!
