How to craft the perfect steak!
Valentine's Day is right around the corner! Here are a couple of simple steps to craft the perfect steak.

Start by seasoning your steak. If you have a good steak, all you really need is salt and pepper, but feel free to experiment with other flavors and seasonings if you so desire! I usually season right before I cook my steak (mostly because I forget to do it earlier in the day), but anytime will work. The longer you let the seasoning stick, the deeper it will penetrate the meat.

Next, you need to choose where to cook. Since Valentine’s Day is in mid-February, I recommend cooking it inside. You’ll need a pan.

Your pan must be super hot before you begin. Place a healthy scoop of Beef Tallow into the pan. I recommend Tallow because it has a high smoke point and won’t fill the house with that haze that may turn away any potential romantics.

Once your pan is warm and adequately oiled, gently lay your steak onto the pan. Let it sit for 2 minutes. Then flip and do the same on the other side. This will sear your steak and give it a gorgeous golden crust.

At this point, depending on the thickness of your steak, it will be almost done. Reduce the heat and cover. Feel free to baste your steak with the oils and other good juice left in the pan. Use a meat thermometer to check for doneness. Below, I’ll put a nice chart showing the proper temperatures for steak doneness.

Once your steak is done, remove it from the pan and let it rest for about 5 minutes before serving. This will allow the steak to “recover” from cooking, helping it to tenderize and retain its juicy flavor.

I recommend serving it with some delicious potatoes. Our Baby Red Potatoes make a gorgeous plate.
