Apple Cider Chicken Thighs
This is a new recipe for the family, but what better way to incorporate fall into a meal than with apple cider and chicken? We recommend serving it with mashed potatoes!

Ingredients

  • (4 Slices, Chopped) Fresh Bacon
  • (8 Thighs (3 lbs)) Chicken Thighs
  • (12 Ounces) Apple Cider
  • (2 - Cut into wedges) Red Apples
  • (2 Cups - Trimmed and Halved) Brussel Sprouts
  • (2 Tablespoons) Thyme
  • (1 Teaspoon) Salt

Directions

  1. In a large skillet, cook bacon to the desired doneness; remove from pan and add chicken skin side down. Cook for about 10 minutes or until browned and remove. 
  2. Cook apple in skillet until browned on both sides. Remove from pan and drain.
  3. Add cider, thyme, and salt to the skillet and boil. Return the chicken to the skillet and simmer for 10 minutes.
  4. Add Brussels sprouts and cook for another 5 minutes, then add apples and finish for a final 4 minutes. Make sure the chicken reaches an internal temp of 175.
  5. Top with bacon and enjoy!
