Apple Cider Chicken Thighs

This is a new recipe for the family, but what better way to incorporate fall into a meal than with apple cider and chicken? We recommend serving it with mashed potatoes!

Ingredients
- (4 Slices, Chopped) Fresh Bacon
- (8 Thighs (3 lbs)) Chicken Thighs
- (12 Ounces) Apple Cider
- (2 - Cut into wedges) Red Apples
- (2 Cups - Trimmed and Halved) Brussel Sprouts
- (2 Tablespoons) Thyme
- (1 Teaspoon) Salt
Directions
- In a large skillet, cook bacon to the desired doneness; remove from pan and add chicken skin side down. Cook for about 10 minutes or until browned and remove.
- Cook apple in skillet until browned on both sides. Remove from pan and drain.
- Add cider, thyme, and salt to the skillet and boil. Return the chicken to the skillet and simmer for 10 minutes.
- Add Brussels sprouts and cook for another 5 minutes, then add apples and finish for a final 4 minutes. Make sure the chicken reaches an internal temp of 175.
- Top with bacon and enjoy!
